The seven minute miracle!
They say 'things can change in a heartbeat'. 'Life can turn on a dime'. Well I want to share my 7 minute miracle with you.
In my journey to bring Food Storage out of the closet (!) and into the light of the kitchen, I was invited to do a little presentation for a non partisan political group. Wow! ME one of the featured speakers!! Anyway, with a bit of trepidation I arrived to find a room full of concerned citizens from all walks of life and from all parties.
Now you have to understand that I studiously avoid such gatherings. I prefer to keep my opinions and views to myself and not be constantly challenged to debate them! Not that I was challenged here. It was mostly men after all and they were old enough to remember to be polite to a lady.
So with my heart a thumpin', I began my 7 minute speech on my new business as a Shelf Reliance/THRIVE consultant and the importance of 'being prepared'. It was supposed to be brief so I didn't give them much more than what I give you on a blog! I sat down thinking "No one clapped. I must have really sucked!"
Fast forward to the end of the meeting.
I had 7 men and 1 woman sign up to know more/host a party (well I called it a 'product demonstration' instead! They are not exactly the 'Mary Kay' crowd!)
And yesterday I had my first customer purchases which were large enough to boost my status ranking from a 'consultant' to a 'mentor' and qualify me for quite a bit of free product for myself and a real commission next month! And my first 'product demo' is scheduled for next Friday.
I am now OFFICIALLY open for business!
Which just goes to show you how much can change in 7 minutes!

I keep going back in to stare!
Is it just me or does everyone do this: You clean out a closet or the fridge and then you keep opening the door to take another look! It's like that old saying, "Take a picture. It will last longer!" Because you know a couple other people in the house will just come along and unconciously (certainly not purposely) rearrange it. So I decided I would clean my pantry and I took a picture cuz it will last longer! I know my family.
At least I can show you what I have started. You can see my first row of #10 sized THRIVE cans. So what did I order first? Only necessities, I assure you!
I have ~ Instant milk!
Freeze dried red and green peppers!
Freeze dried pineapple chunks (DEELISH!)
BROWNIES! (I call that a necessity)
I figure I can at least make a pizza crust with the 30 minute roll recipe and put pineapple and peppers on top. Then have brownies and milk for the all important dessert! Ahhh. I feel so much more secure....

(: No need to panic, just be prepared :)
"The United Nations warned this past Friday that millions of people are now at risk after food prices hit their highest level ever as Global wheat stocks fell to 175.2 million tons from 196.7 million tons a year ago; Global corn stocks are said may be 127.3 million tons at the end of this season, compared with last month’s USDA outlook for 130 million tons; and Global soybean inventories will drop to 58.78 million tons at the end of this season, from 60.4 million tons a year earlier."
This quote from the Bloomberg report coupled with the natural disasters in so many nations, that have ruined crop production, spells higher prices and shortages ahead. I'm not a 'doom and gloomer'. In fact my motto this year, posted in my kitchen in large letters reminds me to, "Be of good cheer." And I plan to keep smiling and keep teaching people the importance of getting their food storage and about how to use it daily.
I said in an earlier post that I have plenty of staple goods to survive on. Lots of wheat, beans, milk, sugar, salt and oil. But have you ever had to make food from raw ingredients like these before? I'll give you an example:
Here is a recipe for beans, something we all eat occasionally but few prepare from start to finish
Really Easy Barbeque Beans
These beans take maybe 5 minutes of hands-on time, and taste really good on a chilly day. They're also very inexpensive. Good with hot cornbread!
The night before you want to serve the beans, put 2 C of small white beans in a crockpot, then add enough water to cover the beans by about 3 inches. Cook on low all night.
The next morning, drain the beans and rinse. Using a 1-cup measuring cup, measure 3/4 C barbeque sauce, then fill to the top with molasses for 1/4 C molasses. (This way, the molasses won't stick to the measuring cup, making for easy cleanup.) Dump the mixture into the crockpot and stir.
5. Let the beans cook in the sauce all day on low, and they'll be ready for supper.
YIKES! For most people, you need 2 things to prepare beans, a can of beans and a can opener! Do you want to wait around for 2 days to eat the only thing you have stored??
OR how about this one:
Wheat-Berry Pilaf
1. Cook wheat berries:
Combine 1 C wheat w/ 5 C water & let stand at least 8 hours or overnight. Without draining, bring to a boil over high heat, then reduce heat & simmer until tender (abt 1½ hours). Drain, cool, and cover. Makes 3 cups.
2. Add vegetables.
Heat 1/4 C oil in large frying pan over med heat. Saute 1 chopped onion & ½ lb mushrooms until limp and liquid has evaporated. Stir in 2 chicken bouillon cubes w/ ½ C hot water. Add mixture to pan w/ ½ tsp basil leaves, 1/4 tsp pepper, and the 3 C cooked wheat berries. Cover & simmer. Thinly slice 2 medium zucchini and carrots. Add to pan, cover & simmer until wheat is heated through and liquid is absorbed (abt 10 minutes).
3. Add cheese & garnish. !!
Garnish? There won't be any 'garnish'! I will be gnawing on my arm by the time this recipe is ready to eat!
For most people, homemade cookies = a tube of dough bought at the store.
Homemade waffles = Eggos or a box of Aunt Jemima’s
Beans come in a can just add can opener!
Rice is white and instant, not brown, long cooking.
Kids favorite part of the chicken is the McNugget.
And for far too many families, the most common dinner recipe involves just 3 ingredients:
1. A car
2. A wallet
3. A McDonald’s drive-thru

Hats
Ever wonder what a year's supply of food looks like all at once? Well here it is!
I've been thinking about my role in this world. Why am I here? What am I supposed to be doing? Who am I anyway? It gets confusing, doesn't it? On the one hand of course we are all human beings having a human experience. Dice that up with a Ginsu knife and we find lots of mini-identities under the title of human being.
So many hats to wear! One minute I'm a woman trying to understand my own complexities, the next I'm a cuddly soft grandma with lots of stories to tell. A while later I'm pulled into political activism by a favorite pundit, the next I'm caught up in the latest home improvement show or Dr. Phil or Oprah.
So I was wearing my beading hat today. Spent most of the day with 2 friends making wedding jewelry. It's fun to wear a creative hat!
I came home to a dark, cold house. Automatically pulled on my Mommy hat and began a sumptuous feast from leftover roast, potatoes and carrots. My head was then embellished with the newest hat in my wardrobe - Preparedness Princess! Out came the other half of the dough from yesterday's 30 minute rolls (I had made cinnamon rolls last night while we watched Oregon Ducks sink) and so I added some hot delicious rolls to the menu. Topped with raspberry freezer jam, it was spectacular!
So maybe my 'role' in this world should be spelled differently. Maybe my new 'roll' in life (Shelf Reliance/THRIVE consultant) is going to take me to real places I can only imagine right now! I know this 'roll' has been very warmly received by my family. They love my new 'roll'. I'm excited about the other new 'rolls' that I will most certainly be sharing with all of you as I find them. Maybe now I will be better at 'rolling' with the punches! When I'm on a 'roll' people will notice! Maybe this new opportunity will help me 'roll' all the other mini-identities into one big whole!

The best of times/the worst of times

It was my Mom's 80th birthday today. She lives about 900 miles away and has a caregiver so she's not up and around independantly anymore. I was here in Oregon. I planned to be there if she made it to this milestone birthday, but that will have to wait a bit and she'd better wait too!
She is on oxygen and more days than not, she confuses me with her older sister, Jan (yes, my favorite Aunt Jan from my first blog), or thinks I'm just in another room. Those kind of days make me sigh at the loss of my mom as my anchor, my strength, my most ardent and faithful fan. But other times she's with it, remembers the topic of our conversation and contributes, even has a spark of her old wit and enthusiasm!
On those occasions, I'll call them the best of times, I get to be the child again. She shines that spotlight on me that she turned on the day I was born and I get to lean on her as my parent. You know, we never had a fight in all the years growing up. Never yelled at each other. I didn't get more than a couple spankings in my whole life and I certainly deserved a HECK of a lot more! But she wouldn't believe that I could ever do anything wrong. Maybe she was in denial, but I prefer to think that she looked beyond whatever my shortcoming or outright sin was, and saw the greater good in me. And she let me know that. And I could thank her for it today and she would probably forget about it tomorrow. But I thank her.
The worst of times are ahead. I'm not going to dwell on that today. WORRYING does not take away tomorrows' TROUBLES, it takes away today's PEACE
I did get to share in the party, though. Through the miracle of modern communication, we were all there at her dining room table singing happy birthday in almost full view of each other! My Aunt Jan and her daughter, Nancy, my cousin, were there and had a laptop. You guessed it. Skyping is sure a lot less expensive than an airline ticket! We live in the best of times don't we?
So happy birthday again to my Mom, Donna Marlene "Mimi" Chamberlin Stutts. I am proud and thankful to be your daughter.

30 Minute Rolls ~ YUM
30 Minute Rolls
Making homemade rolls is suddenly easy with Kelsey's new recipe.
Prep Time
30 minutes
Yield
12 servings
12
Ingredients
3 1⁄2 c warm water
6 T instant yeast
1 c oil
3⁄4 c granulated sugar
1 T thrive iodized salt
3 T thrive whole egg powder (reconstituted)
3 T additional water
8 c thrive whole wheat flour (approximate)
Instructions
*Preheat oven to 400 degrees.
*Use a mixer to combine warm water, instant yeast, oil, and granulated sugar. Let rise 5 minutes until bubbly.
*Add remaining ingredients to bubbling mixture. Mix well and roll out.
*Form dough into rolls and let rise approximately 15 minutes.
*Bake for 10-12 minutes until golden brown. Cool and serve.
Notes
Dough can also be used for pizza crust
I'm trying these out tonight. I used regular flour and only 3T yeast. We'll see how it turns out...
One hour later, ((burp)) Best rolls I've ever had!
One new challenge
Been thinking about the food that I have stored over the years. I'm sure some of it is good. I've been the recipient of many cans of dried foods over the years but much of it is very old (my in-laws storage they bought in the early 70's). So my plan is to begin opening a can here and there as I'm storing my new THRIVE products, and trying them out. What's the worst that could happen? It's no good and becomes animal food! Or it's fine and I begin to rotate it into my cooking.
In fact, I think a great challenge for us all would be to determine to make one meal a week from your food storage. Whether that be grinding some wheat and baking a loaf of bread, making a soup or stew from dehydrated veggies or a whole dinner from stored food, it would put your storage to good use AND give you experience on using it.
I use to think as I would make quarts and quarts of homemade jams and jellies each year, that at least we would have that on our homemade wheat bread if that's all we had to eat! Now I realize that we get sick of the same old thing. (As evidenced by the unused blackberry jam in my cupboards that I am having to give away!)
My thinking before was that at least we would survive. That has changed. Now I want my family to THRIVE! And though we are basically empty nesters at this stage of my life, if there were ever a big crisis, many of my kids would come home.
And I will be prepared!

Dawn of a new year one day at a time
Welcome to my blog spot "Eat To Live". My name is Dorie Smith and I'm here to be of service! Here you will find helpful hints, inspirational nudges and practical advice on how to use food storage to enhance your diet and benefit your family as well as your budget.
You get to take these daily steps as I take them for I am a new consultant for Shelf Reliance/Thrive foods and emergency products.
The title of my blog comes from a quote on my favorite Aunt Jan's refrigerator, left there by her husband, my Uncle Clyde. It said "WE DON'T LIVE TO EAT, WE EAT TO LIVE". Too much of my life I have chosen the former rather than the latter sentiment. 2011 and my new life as a food storage consultant have prompted me to look at food from a different perspective. In case of emergency, I want to have at least 3-6 months of stored items to provide my family with foods they will actually eat! And I want to learn how to use them often so I am used to them. We have auto insurance, life insurance, health insurance. I want my family to have food insurance too!
Using freeze dried foods added to my basic food storage, I plan to have nutritious and interesting meals that go beyond wheat, beans, sugar, milk, oil and salt!
Let's get started! I will be posting recipes that you can try, using as much food storage ingredients as I have on hand, adapted to what you may have.

Ingredients
1⁄2 c dry bread crumbs
1⁄4 c thrive instant milk, prepared
1 T thrive iodized salt
1⁄2 t worcestershire sauce
1 thrive whole egg, prepared
1⁄2 c thrive brown sugar, packed
1 T cornstarch
1 cn pineapple tidbits with juice
1⁄3 c vinegar
1 T soy sauce
1⁄8 c thrive red & green bell peppers
2 c thrive ground beef, rehydrated (or 1 lb hamburger)
1⁄8 c thrive chopped onions
Instructions
* Mix hamburger, dry bread crumbs, instant milk, onions, salt, worcestershire sauce, and egg together; shape into twenty 1 1/2" sized balls.
* Place in skillet and cook over medium heat, turning occasionally, until brown (about 20 minutes)
OR
bake in an ungreased 9x13" pan at 400 degrees for 20-25 minutes, until light brown.
* Mix brown sugar and cornstarch in a skillet. Stir in pineapple, juice, vinegar, and soy sauce.
* Heat to boiling, stirring occasionally. Reduce heat to medium, then add meatballs and peppers.
* Cover and let simmer, stirring occasionally, for 10-15 minutes. Serve over cooked rice.
